In the past, when sake was still shipped in barrels, breweries would dilute the sake with water before selling it to liquor stores, and the stores would dilute it even further before selling it to consumers. This was done to sell larger quantities and make more profit. There was a sarcastic term, “goldfish sake,” which meant sake so diluted with water that a goldfish could swim in it.
However, even during those times, Imayo Tsukasa Brewery shipped its sake without diluting it, which is said to have been greatly appreciated by liquor stores. Furthermore, it was said that “Imayo Tsukasa is not a ‘goldfish sake,’ but a majestic ‘koi carp’,” and they brewed sake with great pride.
