Bamboo shoots preserved in salt. requires more preparation and results in an authentic, high quality menma. Great for ramen, and stir fry

 

Instructions

  1. remove salt: Soak in water (ratio of at least 1:5 menma to water)
  2.  Boil 10L of water in a pot, turn off heat and add 2kg Menma. Soak for 1 hour. Salt 1% – 1.5% after first soak
  3. Discard the water, and repeat. (Boil 10L of water in a pot, turn off heat and add Menma. Soak for 1 hour). Almost no remaining salt after second soak.
  4. Discard the water. Soak in additional water until desired texture.
  5. Season to taste by boiling or stir frying with soy sauce, etc.
